Last year I traveled to Spain for a visit with mi amiga, and this time she joined us in Lund with plans to spend some quality time exploring Copenhagen. But we decided that with wind and rain in the forecast we were better off staying closer to home. Then the weather turned out better than predicted and we were able to tour the highlights of Lund. We spent one night in Lomma hoping to enjoy the beach and a good nature hike. The timing wasn’t right for that, but the place was cozy, and we had a great time catching up over dinner. The evening stroll may have been more like a power walk but it also had its charms, namely sleeping ducks in the canal, a glimpse of the lights of Copenhagen, Öresund bridge, and the warm glow of lamplight in the park.

Back in Lund we managed to see the sights without too much time out in the elements. We even enjoyed some surprise sunshine! Laura brought ingredients for my favorite Spanish tapas and provided another demonstration of how to make Tortilla Española. We tested a microwave method that uses significantly less oil, to great success! And we sampled most of Lund’s cinnamon buns and other Swedish fika treats.

Meanwhile, back in Minnesota, Bryant signed the paperwork on our new little house, which can be licensed for short term rentals and will allow us to stay there when we want. I will be going to Saint Paul to finish getting it set up. We hope to have it available for rental through Minnēstay by Christmas! Bryant and the kids attended to annual Halloween extravaganza hosted by Erin and Ramesh. This year’s theme was Monster Halloween. As usual there were ever so many creative costumes from The Loch Ness monster to Cruella and everything in between. The Noices went as monsters of Greek mythology. I was sorry to miss it this year! Will post more later.
